Maybe the temp sending unit is sending a false reading that it's hot when it really isn't. Take one of those infrared temperature sensors and scan your cooling system and see what you get. I've also seen water pumps with plastic impellers deteriorate and the blades crumble off...won't pump. You can sometime look down into the radiator and see if the coolant circulates while you rev up the engine while it's hot.

Follow up question... with the fanclutch, is it normal for the fan to "roar-up" when taking off from a stop at running temp? It really draws the horse power.
