I am changing the CV axle on 2000 Chevy Cavalier and the replacement part say I need to take the oringlnal inner stub shaft of the old one and reuse it on the new one. How do I get it off the old one and is there anything special I need to do when reinstalling it on the new one?

There should be a roll pin on the original axle. Just use a hammer and punch to remove it and install into the new axle. Be mindful that they usually only go in from one side.
