2003 Mercedes Benz E320 wheels--using modified or racing tires

If I was interested in changing out the tires to more "sportier" rims and tires,
would I need to be concerned with anything? Would the car perform the
same?

You would get improved handling but you don't want racing tires unless you want to buy new tires every month. Low profile tires will ride harsher.
