so I have some new rims, larger tires and a coilover suspension set, I really wanna put it on but should I put them on before winter comes or wait until after?

One of the advantages of an adjustable coilover suspension is that you can RAISE it higher than OEM height to account for winter road conditions. Admittedly, wider tires will actually reduce traction in ice and snow and the weight of the vehicle is spread out over more tire surface contact area. If you live in a temperate zone without much snow or ice in winter, you should be fine.
