I have a 2007 Jeep Wrangler X with a 2" leveling kit on it. I have 285x70r17 Nitto Terra Grapplers on stock JK rims. Could I fit a 33x12.50x17 Nitto Mud Grappler on my stock rims without rubbing?

Very unlikely, what you have is about the max size for stock wheels. The 33's are about an inch wider and half inch taller. You would need some wheel spacers at least, aftermarket wheels at best.
