what socket takes off rotors on my 2001 Buick Lesabre

The rotor itself shouldn't have any fasteners on it. Simply remove the wheel and brake caliper, and the rotor can be removed. In extreme cases, I have seen the rotors rusted on to the hubs and may need a little help to come off. If they are factory rotors, which is doubtful for a 2001, there may be a small retainer clip on one or more of the lug studs to hold the rotor on.
