1990 k3500 spits and cuts out at 3500 rpm

I have a 1990 Chevy K 3500 I converted it over to
carbureted whenever you rev the engine up right at 3500 it
starts cutting out spitting and sputtering any ideas it has a
mild cam

You may have a timing issue, The computer is missing several signals, Mass air sensor or fuel preassure are another possibility as I don't know how complete your conversion was. First suggestion would be a fuel filter.

Computer is complete bypassed and running a 600 holly with 5.5 psi fuel running to it
