Why does low coolant light stay on

Easy answer .. the probe that goes into the coolant gets a buildup and it can't sense the resistance thru the coolant so it thinks that there's no coolant.. it does come out but if you don't get the clip exactly right it will blow out the first time pressure builds up // thus leaving all your ,, coolant on the ground ,,

If the coolant is at the proper level, have the coolant level sensor wiring checked and the sensor replaced.
