Suddenly my heat gauge is registering hot, then normal, then cycle repeats.

Normally my heat gauge reads a little less than halfway up and just stays there, but the
needle is now moving up and down the gauge, and sometimes my cooling fan is on when
I shut the motor down (this is so rare for my care that I have never had it happen before)  
Could it be coolant or bad thermostat that is causing this?

First check your coolant overflow tank and make sure your cooling system is topped off to the fill line with a 50/50 mix.
