Can I disable the butterfly valve to keep it open?

I'm assuming you mean the Throttle Body valve Yes you can just cut the tabs on the spring were the throttle linkage is or wedge a screwdriver or rod in the linkage on the TB but why would you do that the car would be undriveable paul

sure you can! but if your going that far, you might as well just remove the throttle all together.

well those guys dont have a clue what your talking about im assuming your talking about the valve in the exhaust... to be honest i thought they were only in the Z06 but if you say so then ill tell you the answer... yes you can disable it... its a mechanical linkage which is controled by a solenoid cervo via the computer system... you could always have different tips put on the car (although the solution to do so is the same) or you can cut the linkage (should just be a small wire or rod... ) or pull the solenoid, or cut the power to the solenoid (may cause check engine light) then spot weld the valve open (or look into removing it entierley... it should be noted that chevy may have it in there for backpressure issues and it may be benifitial to leave it there... besides you dont need ur vette screaming at everyone all the time do you???
