My son has a 2008 chevy silverado LT. The tempature gauges bounces all around and then bottoms out at 160. The truck has coolant and no apparent leaks.

engine temp sensor? You may want to replace it, there may be a safety built in when the temp gauge gets x degrees hot, A/C shuts off to minimize heating
