Asking if a 323i series with 207,000 miles for $500 is a
good price for a first time car for my son.

Those cars are great as long as there's no serious running issues, very safe car and pretty reliable. Sounds like a great deal

If the car is in overall good shape and has been maintained, it could be a good buy. But for $500, it probably needs a bit of work to get it to a reliable state. They can be good, dependable cars, but you need to make sure everything is in good nick.
