Do I have to keep using LIqui Moly oil?

I have a 2005 SRX with super low miles (60k).  It's been getting Liqui Moly oil
for the past 3 years, but I'm changing mechanics.   Will it cause a problem if I
change to a different synthetic oil?

If you want the benefits of Liqui Moly you need to add it with every oil change.

The only reason I used Liqui Moly was that the shop I was referred to when I inherited this car used it. They've proven tough to deal with so I'm moving on - theoretically there won't be any issue moving to a Mobil 1 or Kendall, right?

Switching oil is not a problem. You can buy the LM additive on Amazon, I do.
