Temperature gauge goes to 210 immediately when I start my truck.

I had to have a new water pump and radiator put in my 2011 Chevrolet
Silverado. Since I had these put in my temperature gauge goes to 210 as soon
as I crank my truck is this normal? Before I had these parts put in it would
gradually go up to 210 as the truck ran.

you gauges should make a full sweep upon starting vehicle to verify operation.
