My thermostat needle drops and my car jumps, what can I do?

I have a 2010 Honda Accord Ex-L that has some issues. My thermostat needle
will drop randomly and my car will jolt when it does. I replaced the thermostat
sensor and it still hasn't fixed the problem. Could it be the thermostat itself or a
wiring issue? It doesn't overheat at all.
