why does it seem like my car is making an overheating noise but thermostat gauge doesnt show hot

my car sounds like it is overheating by making a bubbling noise when i shut it
off, but the thermostat guage does not show overheating

It's getting to hot probably losing the additives in the antifreeze causing it to boil . I would suggest having the coolant system flushed

Head gasket failure, exhaust gas exiting out into the cooling system, Replace head gasket, get it pressure checked for cracks and if good have it resurfaced and use new gaskets.
