I accidentally downshifted into second instead of up shifting into 6th with the Paddles at 70 mph. Could I have done any damage?

No, I don't think so and here's why. Most automatic transmissions with paddle shifters won't allow the engine to shift into lower gear unless it can handle it. I would definitely recommend not pushing it though, just be careful next time.
I did the EXACT same thing yesterday (approx 60 mph shifting down from 3rd to 2nd for an engine break). My transmission in "M "and "D" now has hesitation in shifting. When she up- shifts, she has this hesitation as though she has a clutch pressed in and then drops into gear at a high RPM and jerks forward. Dealer says her tranny needs to come down and be fixed/replaced. She a 2015 V6 with 38,xxx miles. ='(
