Could I put a 2003 Z71 5.3L in my 1997 gmc
suburban 5.7L 1500.

Mechanically yes, wiring harness and computer and supporting components fuel pump 02 sensors ect to make it run properly if at all.

yes you can if all the electronics and transmission are transferred as well, but you syill going to be in for a hassle getting it all to work properly as it is not going to be plug and play. Personally I'd stick with the 5.7.
