What temperature should the engine cooling fan come on?

2015 Dodge Challenger R/T 5.7..What temperature should the factory engine cooling fan come on??..I hit a porcupine last night and when I got home I heard the cooling fan running..I never noticed or heard it run in the past..This morning I started the car and let it run for 3 minutes and shut it of and the cooling fan was running..The temp gauge never came close to the hot mark last night..The gauge showed just under the half mark..Does the engine cooling fan actually come on when you start the vehicle??
