Looking to reset the "check engine" light on a 2005 odyssey

You need to be concerned with what caused the Check Engine Light to come on, and later turning it off. The OBDII system has detected a fault somewhere. It can be turned off with a scanner, but will just reappear until the fault id found and fixed. For starters, the most common cause is a loose or missing gas cap. If that does not do it, you need an OBDII scan.
