how much should I pay to have struts replaced in a Honda 2001 odessey

I replaced the struts on my 2004 Odyessy myself. I bought the spring/plate/strut assembly as one unit - each were about $135. To buy all the components separately will cost you at least $235 - will require a little more time than if you buy it all assembled. It took me about 1.5 hours to do both. You need a lift, a marker and an air wrench (preferred).
