what problems can result from removing catalytic converters on a 2001 outback

Would think it might disturb the air fuel ratio not to mention being illegal in most or all states. Some vehicles have several o2 sensors being placed before and aft of the catalytic converters and especially on newer cars it would be a major issue in my opinion. Farm, Strip, or private land use maybe but on public road and passing a inspection No way.
