The coolant continues to move out of the engine into the radiator endlessly. The thermostat opens & closes, while closed the coolant cools in the radiator and the coolant in engine reaches a temp set on the thermostat in-which it opens and the cooled coolant goes into the engine and the warmed coolant goes into the radiator. Keeping the engine under the temp rating of the thermostat. So yes it needs the thermostat. But you could have other issues but first put the stat in, if it continues to overheat it may have head gasket issues.

Yes it will over heat , will use more fuel, you will have no interior heating when on long run, best get new thermostat.
