Building a 1953 chevy 3100 truck

I'm building a 1953 Chevy 3100 and in putting it on a 1999
GMC  Sonoma  with the stock 4.3  vortec v6/ automatic
transmission. But I'm using the floor and firewall from the
Sonoma along with the stock wiring harness, the problem I
have is I'm using replacement gauges that fit the stock
1953 dashboard but,the harness to the dashboard of the
Sonoma is like a 30pin connector and I dont know if the
computer can even work with the gauges

Look for aftermarket gauges that work with your system. The analog gauges can be hooked up separately to their own analog sensors on the engine.
