Why does my temp gauge spike up and down

Everytime I start my jeep cherokee, the temperature
gauge will spike up to overheat for about ten
seconds then go back to normal. When I'm idling in
park it will do the same thing, or sometimes even
while I'm driving. I've changed the thermostat,
coolant temperature sensor, and the connector for
the sensor, I've flushed the radiator out, and still no
solution.

All the air out? How are the bearings on your water pump? Did you install thermostat with bleed hole in the top position? Did you pressure test system?

I've installed the thermostat correctly and my water pump was leaking a few months ago then just stopped leaking
