I've been researching the 2019 Subaru Ascent Limited. I can see what the CG listings call a good deal and a great deal. Is there a way to see what people are actually paying? (without being subjected to a dozen dealer phone calls and emails)

No way to know what people are actually paying unless you talk directly to an owner. Use one of the car buying sites and make an offer based on the data you find.

By the way Ed.. TrueCar is a site run for the dealers and it no longer gives consumers good information.
