It's an electrical short. Something is draining the battery. Check the power accessories. And things like trunk light.
Ok these cars are real funny about their grounds and need periodic attention. First test battery voltage. Is it fully charged? If not charge it up. If so then check all battery connections. Pay special attention to the negative connections where they attach to the frame and motor.(remove them and wire brush both contact points.) These two areas seem to give lots of gt owners all sorts of issues. Once that is done if still a click no start then test the solenoid wire on the starter. It's the small one. The female connection on the wire tends to get loose. Either replace it or pinch it with a pair of pliers to make it tighter but use caution pinch it to tight and it will break.
Oh by the way great looking car. Here's the one we built for my sons 16th birthday.
With it working after starter replacement I would check battery voltage and the solenoid wire on starter first.
