Ac not blowing cold after recharging it

The AC was blowing cold before but had doubts
that it was FULLY charged so we bought a can with
the pressure gauge on it and it was showing that it
was low so we added a can and now it doesn't
blow cold and I can hear a sound when you turn it
on full blast and it feels as if something under the
hood is kicking in and off (which is causing the car
to idle really rough) I'm wondering if it is tooooooo
full. Please help.

The only way to know is to hook up a manifold gauge set. Your proper pressures will depend on ambient temperature. Yes, you may have overcharged the system. Too much head pressure can cause issues concerning compressor function.
