My 2003 Chevy s10 4.3 v6 lil gauge is rising and
falling with the rpm gauge

My thinking is your oil pump speeds up and slows down with rpms. Is this a high-mileage engine? Maybe you could use an analog gage in place of your oil pressure sending unit, to check oil pressure, see if it reacts the same way as dash gage. In the old days, the minimum oil pressure spec was 10 psi for every 1k rpms. I don't have your oil pressure spec in front of me, that's the spec you need to use.
