Changed water pump and poked hole in thermostat   and its running rough smells gasey.
After about 4 to 5 miles it still overheats. I can hear water running through my dash hoses.

You need to change the thermostat compleatly. It's not opening up when it should. Thus causing the engine to overheat. Be sure to grind off the old seals and replace them to get a proper system seal.
