I have a 2000 toyota camry 4 door. The original tires on it are 205/15. Would I be able to use 195/60/15?

Need the missing number, the profile, to give you an accurate comparison. If it is 60 for both, you are going to change to a narrower tire with a shorter sidewall. 205/60-15 has a total diameter of 24.69" and a 195/60-15 is 24.21", just slightly less than a half inch smaller diameter. Your speedometer will read 60mph at a true 58.85. Not a huge difference, just slightly lower gear ratios.
