I replaced the thermostat and the thermostat housing but the thermostat gasket keeps ripping when we screw in the two bolts. I have a jeep grand cherokee 2004

Make sure it is the correct gasket, if it is, just the holes bigger before you put it on.

use rtv form a gasket.......Metallic black RTV silicone gasket maker for efficient sealing and bonding Capacity: 3.35 oz. Low odor sealant for use on valve and timing covers, oil pans, pumps, thermostat housing and more
