I seriously doubt that the heads would interchange. The 2003 is a generation 3 engine and the 2011 is a gen 4. As far as engines it is a mistake to install an old engine in a smog controlled vehicle. The truck would probably never pass smog inspection with the old engine.
Ford should use Cummins engines - the ultimate diesel pickup in my opinion.
