issue with thermostat reader

how do i know if the problem is the radiator or thermostat

The problem is after the car is completely warm up in I’m driving the thermostat reader would go up to the red then drop down to the midway point of the reader when I’m not accelerating while driving but go up when I a accelerator but this is something I’m just noticing
