Check engine light at highway speeds then goes out after a few days.

I have a 2004 Silverado 5.3. I don't drive it a lot on the highway.  But when I do the check
engine light comes on steady. It stays on for a couple of days then goes out till the next
time I take it on the highway. I just changed plugs and wires. Any ideas?
