Just realized my oil pressure is maxed out on my 2006 Chevy Silverado and I have to make a 3 and a half hour trip in the morning. Will it be ok to drive?

Most likely the gauge or the sender is bad. I have seen many years ago a Ford pickup with a stuck oil pump pressure relief spring blow the case right off of oil filters. Not sure if the oil pump in your Chevy is capable of doing that. You need to get the oil pressure measured with a mechanical gauge to eliminate the oil pump as being defective.
