Does a 2004 Ford Taurus have a sensor in the oil take that makes it not crank if low

Never heard of anything like that. Did you run the oil so low that the oil light came on? Or did the car just not turn over and you discovered that the oil was low when you pulled the stick?
Some newer cars have low oil level sensors but I don't think a 2004 Taurus does. If the low oil pressure light is on then you probably ran it out of oil. If you add oil and the engine won't turn over you may have seized the engine. More information will help us help you!
