If it is actually overheating and not doing what mawh has suggested do a good cooling system flush. Cooling ports in engine block could be clogged. Prestone Super Flush is really good.
are the radiator cooling fans coming 'on.' If not change the fan switch relay... on most model years, it's on the driver-side, wheel well... accessible under the battery box. You'll have to remove the battery and battery box tray to get to it easily. held on my two sheet metal bolts. Use heat sink compound underneath the new one against the surface and bolt it on. Remove the connection after you take it off as it's easier to see it to avoid breaking the plastic tab/nibs.
i replaced those parts also...my heads were cracked
I've owned many Caravans. 2000, 2011 and my 2005 which has 435,000 miles on it. I made a video about it. hope this helps https://www.youtube.com/watch?v=Z7PSwzoDAcs&t=25s
U COULD HAVE A BAD LOWER INTAKE MANIFOLD GASKET GONE BAD. PUT A RADIATOR PRESSURE TESTER ON IT AND YULL FIND LOST OF PRESSURE AND NO SIGH OF ANY LEAK UNDER CAR THAT FUID IS LEAKING DOWN INTO THE CYLINDER BURNING AT THE SPARK PLUGS PULL THEM OUT AND CHECK IN SIDE CYLINDER WITH CAMERA IF U HAVE ONE.
I put a pressure tester on there didn't loss pressure. But all the fluids will begone. Still over heating I really dont know what else to do. Change out cooling oil housing. Temp sensor. Thermostat. Still no leaks . What you think...

I have the same problem with my caravan I just changed out the thermostat and it still does the same thing yet it is not overheating it just says it is why is that how do I fix the gauge from pegging out when the car is not overheating at all
I am having the same exact issue with my 2016 caravan. I've changed the water pump, thermostat, flushed the radiator and still says it's overheating. Mostly when going up a steep grade. Cooling fan is working. The tempuratute on the engine coolant lines are not the same as what my dash says. And also the thermostat is not opening at the correct tempurature, at least according to the dashboard coolant temp. On the engine things are much cooler. I'm thinking maybe the ect sensors, but wondering why the check engine light is not on if they are bad. Guru9W18DS, please post if you find a fix for yours and I will do the same.
OMG I found the answer and finally fixed the issue I was going crazy. So, three months ago our check engine light came on and I pulled the code to look up and see what the problem was. Best solution for this code was to replace the thermostat. Which I did and the check engine light went off and no more code. We were happy. Then my wife started noticing the car was overheating going up steep hills or grades. So for the past three months I've been trying to figure out what the heck was wrong with it. Overheating and erratic changes in temp, but no more check engine light or code. I changed the thermostat twice. Once from autozone and once from oriellys. So I was pretty sure it had to be something else. Changed the water pump, the coolant sensors, flushed and back flushed the radiator, tested the pressure and everything seemed fine. Except the thermostat wasn't opening up until 220 according to the dashboard guage. But the laser thermometer I bought was testing way lower on the thermostat housing and lower rad hose. So I was really thinking it had to be electronic or sensor issues. Then as a last ditch effort I decided to get an OEM thermostat and see if it made any difference. And it turns out that was the problem all along. So after countless hours and money spent could have been avoided if I just bought the dodge brand all along. Lesson learned. I hope this information finds others having this same issue. DON'T BUY PARTS FROM AUTO REPAIR STORES LIKE AUTO ZONE AND ORILLEYS. STICK TO THE OEM PARTS ONLY AND YOU WILL SAVE YOURSELF A HUGE HEADACHE, TIME AND MONEY.
