95 grand am temp fluctuates and then overheats

I replaced radiator , hoses , thermostat, water pump , reservoir cap and
antifreeze and the temp gauge fluctuates while driving. Now the car is parked
because it overheated and temp light came on , but radiator is not hot.This has
been going on for two weeks and I am afraid to drive it. What could it be ?
There are no leaks and the fluids are fine .

do the fans come on when it gets hot ? do you have white exhaust ,? is there a milky mix on the bottom of the oil fill cap ? are you loosing coolant ? has your mileage and performance decreased ?
the fans come on. no white exhaust. Haven't checked the oil filler cap yet. Coolant is being thrown out of overflow pipe and around reservoir cap but not a lot. Performance has not decreased. Thanks
I would check the coolant level and purge air out of the cooling system.
all of that was done when we replaced all those parts. This is very frustrating. The car has been parked for over 8 years , but we flushed everything.
Compression is leaking into cooling system due to blown head gasket , Do a leak down test to confirm

a compression test should be done , see if the thermostat opens in hot water and that it isn't in backwards
I missed the part about the radiator being cool ,Test the thermostat in boiling water to make sure it opens and that it's installed right . If that isn't it Replace the radiator
It has a new radiator. There is no milky residue on cap and there is no white smoke coming from exhaust. This is weird , but I appreciate the input. The car runs well it just overheats from time to time.
Look like Your temperature sensor is not working properly

if it over heats only sometimes then tests would have to be made when that occurs , if tested when running o.k. nothing will show , perhaps it will work itself out , stranger things have happened
really strange. I have replaced 80% parts due to it sitting for so long. It still runs nice with no missing or odd sounds. I replaced the air sensor , but not the temp sensor. I will try that next
A mechanic told me it is a blown head gasket , but it does not show the signs of a head gasket. I am not sure if he is sincere or he just sees an opportunity to make money !! LOL

everything is pointing to a blown head gasket , did he actually do the test ? ? and unless this was owned by jon voit you should cut your loses and junk it , lesson learned
But wouldn't the issue be consistent if it was a blown gasket ? One day it is fine and two days later it overheats . Then two days later it is fine again. I would think if it was a head gasket- it would not run right or there would be smoke, a leak or milky sludge oil, right ? I haven't worked on cars in years , so this is puzzling.

that's why you test things , the other stuff is just indications , the mechanic may have gone with an assumption like the rest of us , I agree if the gasket was bad and you've been driving it by this time real problems would have surfaced , do a re- assessment leaving no stone un turned
