I have this engine installed in my Jeep, my temperature gauge is going crazy, it goes from looking like its warming up to all the way to the right as in hot! in no time, any advise? thank you

so as soon as I get on the road you can see the gauge going up to its regular
temperature and just out of no where it goes all the way to the right and it stays
there, I know for a fact my jeep is not over heating, any ideas on what might be
the issue? I was thinking a temperature sending unit maybe? any help will be
appreciated thanks.

When the gage is showing hot, have the engine shot with a heat gun and see if there are any hot spots. It may be a sensor handing out incorrect readings. Make sure there are no blockage of the water hoses from radiator to engine and back. If the engine does not act, sound or smell of over heating make sure there is sufficient coolant in the radiator. Start there.
