Water lose

I have a 05 cavalier I'm losing water but cant see
any drips... took a compression test running
around 180 on all cylinders.. I don't want to pull the
head if it's not a head gasket

Maybe the radiator or hoses have a small leak. You can pressure test the cooling system.
