What could it be that's sounding like a popping noise in the back of the truck only when I am rolling at 45mph or faster.

Does it go away when letting off the gas pedal? Could be U joints
Yes sometimes. It sounds like lottery balls in the lottery machine. But it only occurs when I am driving 45mph or faster and sounds like the wind underneath has something to do with it too, I think.
Vibration is another symptom. But if it had a locking differential those make noise as well. There is a TSB on them saying add locking differential additive to them if they occur if that doesn't work then remove all fluid and add 80w90 gear oil.
