Your fan's out. Could be a relay, wire connection, or a bad fan motor.
Our gauges are garbage, with a scanner, what's the true temp when it does this? Should be right at your thermostat rating around 195, not around 210+ like the idiot gauge shows. Make sure your fan clutch is cycling and working. Could be your temp sensor too. Instead of throwing parts at it, see what the true temp is with a scanner.
