So if I have a Chevy Suburban and it takes E85 is it okay to use something like 87 or 91 unleaded

Yes, as F_O_R posted, regular 87 octane through 93 octane with or without ethanol is fine. You can also run any ethanol content between none and E-10 through E-85. You will lose some fuel mileage running E-85, but it is cheaper than regular gasoline. You may pickup 2 or 3 mpg running 87 octane versus E-85, but performance may be slightly better running the E- 85 due to it's much higher octane rating.
