Changed The head and head gasket

I changed the head and head gasket on my 2003
Chevy S 10 2.2 L Grant good for about four hours
then stalled what and restart it I got it restarted and
there’s water in my oil and it’s running rough what
could’ve I’ve done wrong

Well lots could be at fault. Why did you decide to change the head gasket? Did you check oil quality before changing the head gasket? Did it run ruff before? If no to all of these I would suspect having installed the gasket upside down or to having a cracked head or block.
