ARS light comes on and car slows to idle speed when I try to accelerate fast

This happens in both settings of the traction control switch on the dash
How do I fix this so I can drive it like I want to

You have 4 ASR cables that needs to be checked, often one or more need to be changed, dealer may not want to work on these because of the corrosion, find the parts then find a good mechanic who's not afraid of getting dirty nor use a hammer. The cables will cost around $100+ if the cables are good then you will need an analyzer to check while the fault light is still on.
