I have a 2007 chevy tahoe was driving about 10 mins and
noticed that the a light come on saying " ENGINE HOT A/C
TURNED OFF" and temp was all the way up to 260 highest
reading turned truck off drove a little and turned heater
down and it went away and cooled down but heater didnt
get warm

Car is overheating and its telling you to turn items off to prevent overheating here are things that will cause overheating that you may want to check....Could be the folliwing: The pump may not be leaking but it may not be moving the water through the system (Impellers may be broken) thermostat may not be opening, fan may not be coming on at the correct temperature (should be at about 210 to 220) you may need to flush the system. The antifreeze mix may not be correct (should be 50/50). You may have air in the system that needs to be bleed out. Defective radiator cap. Air vent could be clogged. The exterior of the radiator may be clooged with debris and may need to be cleaned.

The thing is that its about 20 degrees out side and not even runing 10 mins and going about 10 mph in snow
It sounds like you have low coolant, Check the coolant level.
Is the outside of the radiator packed full of snow due to going through drifts? Get lots of snow in the wrong place and they will heat up quick. Outside air temperature doesn't have much to do with it at 20 degrees.
I agree, if the heater is not putting out heat and the engine is hot, sounds like low coolant for one reason or another.

Plenty of fluid heater turns on and heats up just starts heating up quick and changed out thermostate a month a go
