2006 buick lacrosse stalling issue

While driving the car and I go from a stop to about 2-3k rpm and release the
gas completely, the car will either come very close to stalling and go back up to
idle speeds 800-1k or completely stall requiring the key to be turned.

Sounds like a dirty throttle body. Clean the carbon out with brake cleaner but unplug the connector before cleaning! If cleaning doesn't work then I'd suspect a bad throttle body.
