I'm just trying to figure out what could be wrong with it

I have a 2000 Buick LeSabre when I get on the
highway the car shut completely down you have to
unhook the battery for 24 to 48 hours in and start
running what could be the problem?

There may be a problem with the pass lock system, security system is what this sounds like.

I donno Rowe ,,, Security systems are not supposed to shut you down once the car is rolling (safety reasons) Most will allow a start then shut down in a couple seconds ,,, or prevent starting completly

It should be setting a trouble code or codes. Get it scanned at any auto parts place and post back here. Hopefully you aren't having an ECU problem.
