My car's value is a mystery

1991 Chevy Lumina Euro 3.1 , 68,000 original
miles.  Thousands of dollars in repairs in 4 years.  
Finally found a shop that nursed her back to
health.  My first appointment with them I made the
statement "i hate to put pressure on you but you
are her last hope".   Sweeeeet! Job well done JK's.
I've hit a brick wall on putting a value on her.  Do I
have to hire an appraiser to get a true value. Or ...??

Maybe $1,500 on a good day. Hiring an appraiser would be a waste of money.

Spending 5 grand on a 1 grand car does not make a 6 grand car, it makes a 1 grand car.

Remember, you are still trying to peddle a 30 year old car no matter what you have invested in parts. Different story if the car had some collector value but a Chevy Lumina Coupe does not make the grade. It is not worth the sum of its parts.
